Sprouting is the practice of germinating seeds (e.g., mung beans, sunflower seeds, etc.) to be eaten raw or cooked. It's one options for nomads to get fresh vegetarian food or greens in a van, and is about the only practical option for growing your own food in your vehicle. For those who like to garden, it may be a good hobby while traveling.

The process is fairly straightforward: soak beans in a jar of water for a long time (overnight), drain upside down, and repeat rinsing and draining a few times a day until desired growth is reached. A common stopping point is when the grown "tail" gets as long as the seed. This typically takes 2-5 days. Keeping the jar upside down keeps the sprouts moist but not sitting in moisture.

Dedicated sprouting gear exists, though mason jars with breathable lids (cheesecloth, screen, etc.) works fine. Wide mouth jars are easier to clean and remove sprouts from.
