If your table is attached to a removable mount, such as the popular Lagun table mount, consider adding more than one mounting point so you can move the table surface between places in your van as your needs change during the day. For example, a table could be near your sink most of the day, and moved next to your bed at night.
Consider a table with a surface that folds out to create additional surface area, or with a surface which lifts to reveal storage underneath.
